What Exactly Is Chana?

Chana is the Hindi and Nepali word for chickpea, but it is not one single thing. It is a whole family: the small dark bean called kala chana, the split and skinned version called chana dal, the flour called besan, and the pale round chickpea most Canadians already know from hummus, which we call kabuli chana or white chickpea.

If you have shopped at a mainstream grocery store and only ever seen the pale round chickpea, kala chana will look like a completely different bean. It is smaller, darker, and has a thicker skin, and it behaves differently in the pot too.

Kala Chana: The Black Chickpea

Kala chana (also spelled kaalo chana) is a small, dark brown chickpea with a much firmer bite than its pale cousin. It is grown widely across Nepal and South Asia and is a staple in both everyday cooking and festival food.

Nutritionally it punches above its weight: high in fibre, high in plant protein, and slow-digesting, which is why it shows up in fasting-day meals and post-workout dals alike. Our kaalo chana needs an overnight soak (8 to 12 hours) before cooking. Skipping the soak means a much longer boil and a less even texture, so plan ahead the night before you want kala chana curry or chole.

Cooking Chole and Chana Masala at Home

Chole (also called chana masala) is the classic Punjabi chickpea curry, usually made with the pale kabuli chana rather than kala chana, though a kala chana version exists too and has an earthier, nuttier flavour.

Frequently asked questions

What's the difference between kala chana and regular chickpeas?

Kala chana is a small, dark brown chickpea with a thick skin and a firm, nutty bite. The chickpea most Canadians know (pale, round, used in hummus) is called kabuli chana. They are related but cook differently and are rarely used interchangeably in traditional recipes.

Is chana dal the same thing as kala chana?

No. Chana dal is kala chana with the skin removed and split in half, so it looks small, yellow and lentil-like. Our chana daal cooks in a fraction of the time of whole kala chana and has a softer, sweeter finish, closer to toor dal.

How long should I soak kala chana before cooking?

Soak whole kala chana for 8 to 12 hours, or overnight, before boiling. Skipping the soak is possible but means a much longer cook time and an uneven texture, some beans mushy and others still firm.

Can I use kala chana instead of white chickpeas in chole or chana masala?

Yes, and many households in Nepal and North India do exactly that. Kala chana chole has a darker colour and earthier, nuttier flavour than the classic pale-chickpea version, but the same MDH chana masala spice mix works for both.

What is besan used for besides chana flour recipes?

Besan (gram flour, ground from chana dal) is the base for pakoras, dhokla, besan laddu, and thickening agents in some curries. It behaves very differently from wheat flour or rice flour, so it is not a straight swap in most baking.
