Pumpkin shoots
Farsi ko munta is the tip of the pumpkin vine — young leaves, soft stems and tendrils, cut while everything is still tender. In Nepal the pumpkin itself is almost a by-product of a plant grown partly for these. Ours comes off Canadian farms, cut young.

What it tastes like
Fuller and more savoury than chayote shoots, with a faint sweetness from the stems and a texture closer to a cooked green bean. The fuzz on the young leaves disappears entirely once it is cooked.
How it is used
Peel the coarse strings off the thicker stems, chop everything into short lengths, and cook with garlic, turmeric and salt until the stems are tender. It is very good with a little tomato, or simmered into a thin jhol with fresh dal. Timur at the end is optional but Nepali.
Keeping it
Two to three days in the fridge, loosely wrapped. If the leaves wilt before you get to them, the stems are still good — they hold much longer than the leaf does.
