Dalle khursani is the small round chilli of the Nepali hills — cherry-shaped, thin-walled and hot enough to make a whole pot of achar sing. Ours is grown right here in Canada rather than imported, and it comes mixed from green through orange to deep red, exactly as it is picked.

What it tastes like

Sharp, fruity heat rather than a flat burn — closer to a habanero in character than to a dried red chilli, with a bright, almost sweet finish. Green dalle is grassier and slightly milder; the red ones carry more perfume and more punch. Most Nepali kitchens use both, often in the same jar.

How it is used

The classic is dalle ko achar: chillies pounded with garlic, timur and salt into a fierce condiment that lives on the table beside dal-bhat. Whole chillies pickled in brine or mustard oil keep for months and turn up next to sekuwa, momo and chow mein. A single one, slit and dropped into a curry, is enough to season the whole pot.

Keeping it

Fresh dalle keeps about a week in the fridge in a paper bag; whole chillies freeze well for months and pickle even better. If you are making achar, work with gloves — the oils stay on your hands far longer than you expect.

Roughly 100,000–350,000 Scoville units, in the same range as a habanero — considerably hotter than a jalapeño. One chilli is plenty for a family-sized curry.
