Hard cheese from the high pastures, dried until it is closer to wood than to anything you would put on a cracker. Churpi is not eaten so much as worked on: a piece goes in the side of the mouth and softens over twenty minutes or half an hour into something chewy, milky and faintly smoky. It is the oldest trail food in the Himalaya, and the reason is simple. Milk will not last a week at altitude; churpi lasts a year. Herders have carried it over passes for as long as anyone has been crossing them, and plenty of Nepali children grew up with a piece of it in their cheek through a whole afternoon. Soften it first if you would rather not wait. A minute in hot tea or a few seconds of steam turns it chewy straight away, which is also how it goes into soup.
