NMU Timur ko Chhop with Buff - 300g
$18.99
Timur is the Himalayan Sichuan pepper: a small husked berry that smells of citrus and leaves a light numbing buzz on the tongue rather than a burn. Chhop is what Nepali kitchens do with it, pounding it into a coarse, oily pickle with chilli, garlic and mustard oil. This is the buff version, made with dried buffalo, which gives it the deep chew and the smoky edge that sukuti brings to anything it is cooked into. A spoonful goes beside dal bhat, on the plate with sekuwa, or straight onto rice. It is rich and salty, so it is a condiment rather than a curry.

Frequently asked questions
What is Nepali achar (pickle)?
Achar is the spiced, tangy Nepali pickle eaten with dal-bhat, momo and snacks. It is built on mustard oil, timur, fenugreek, garlic and chillies, and ranges from sour and tangy to very hot (dalle and akabare khursani).
How do you eat achar?
Serve a spoonful as a condiment alongside dal-bhat, rice, momo, sel roti or chiura. A little goes a long way — it ties the whole meal together.
