Red and Green Mix
Dalle khursani, the small round chilli of the Nepali hills, also called akabare. It is cherry-shaped, thin-walled and properly hot: roughly the range of a habanero, with a sharp fruity heat rather than the flat burn of a dried red chilli. Choose green only, picked before they turn, which are grassier and slightly sharper; or the red and green mix, where the ripe ones bring a rounder, sweeter heat. Both are the same chilli at different stages, and plenty of people prefer the mix for achar because it gives colour as well as heat. The classic use is dalle ko achar: pounded with garlic, timur and salt into a condiment that lives on the table. They also pickle whole in brine, and a couple sliced into a curry does the work of a whole handful of milder chillies.

- Pound into achar with garlic, timur and salt, pickle whole in brine, or slice one or two into a curry. Handle with care and wash your hands after, because the heat carries.

- Keep fresh chillies in a paper bag in the fridge, where they hold about a week. They freeze whole for months and lose very little, which is what most people do with a kilo.
